Method to make palak paneer

To make the spinach puree

Wash and put spinach leaves to boil. Boil till the leaves become soft and cooked and do not look raw. Strain the leaves in a colander and let them cool, you can throw away the excess water or store it to add it in the curry at a later stage while blending. I usually do not add much water while boiling the spinach just enough water so that I can strain and throw away the excess if there is any.

Once boiled and cooled down completely make a puree of it in a blending jar

To make the gravy

Meanwhile chop onions and tomatoes in small sized cube pieces .

Take a kadhai or a deeper pan or a saucepan and add 1 tsp ghee to it

Add 2 tsp oil to it

Now add chopped onions and fry till they turn golden brown .

To it add tomatoes, and cook them till they are soft and mushy. The onions and the tomatoes should be properly cooked and should have no rawness in it. Once they are properly mixed and cooked together you can now add all the dry spices.  Which include turmeric , red chilli powder , coriander powder, cumin powder , garam masala powder and salt .

Let these spices mix and cook properly with the onion tomato mixture , you can add just 2spoons of water if the mixture is getting dry or sticking to the bottom of the pan . but don’t add too much water just enough to cook the spices properly so that their rawness goes away , and once the mixture is thickened and cooked properly . you can now proceed to add the spinach .

Add the spinach puree mix it and then add half glass of water and let it boil for 5 to 10 minutes till the gravy thickens .

Add chopped paneer to the gravy and let it boil for another 3 to 4 minutes .

Once the gravy thickens, turn off the flame and serve.

This dish can be enjoyed with roti, naan or even with plain steamed rice.
