  • Dry coconut grated – 1 cup
  • Onions long sliced – 2 medium sized long sliced
  • Cloves – 3 to 4
  • Coriander seeds- 1 tsp
  • Cinnamon – 2 inch piece stick
  • Green cardamom – 3 pods

  • Garam masala powder – ½ tsp
  • Meat masala powder – 1 tsp
  • Ginger garlic paste – 1 tsp
  • Salt – 1 tsp
  • Oil to roast as well as cook the curry

To pre cook the mutton

Wash 1 kg of mutton properly in water.

Then take a pressure cooker. add in 3 tsp of oil and let it heat up.

To the oil now add 5 to 6 curry leaves carefully and let them splutter.

Add in 1 small sized onion finely chopped and saute it , we don’t have to completely brown it , just saute it till it becomes light brown in color .

Keep stirring it , then add 1 tsp og ginger garlic paste and stir it well , the paste should be cooked properly till its rawness goes away . keep stirring so that the paste doesn’t stick to the bottom of the cooker . cook it till it releases oil from the sides that how we know its properly cooked and its rawness has gone away .

Now add in 1 small sized finely chopped tomato and mix well . to this add ½ tsp of turmeric and about 1 tsp of salt and mix well .

Add just half cup of water. Don’t add too much of water. Because the meat and the spices will cook well in the pressure cooker and release oil and water. To avoid it from being too watery just add the given quantity not more than that.

And then cover the lid of the pressure cooker and let the mutton cook in it till the cooker releases  4 to 5 whistles .

Once done let it rest and cool down completely and only then open the lid of the cooker .

Also its okay if it’s a little watery we use that water further in the gravy.

To roast the spices/masalas

Take a tawa or flat pan preferably with edges .

Add in 3 tsp of oil to it , let the oil heat up and add 2 medium sized long sliced onions to it and fry them well in the oil .

We have to brown these onions so keep the flame on medium heat and keep stirring the onions in between. We don’t have to burn these onions. But also need them to brown. So keep stirring them so that they get cooked evenly.

Once they turn brown in color remove them from the pan ,by leaving as much oil as you can in the pan and then take them out on to a plate .

Now in the same oil , there must be at least 1 tsp oil remaining on the pan in that oil we are going to roast the whole spices .

So switch the flame to low and add in 1 tsp of coriander seeds and keep stirring them we have to slightly roast them till they change color very slightly , we don’t need to brown them completely and neither burn them , they cook really fast so keep the flame on low and keep stirring them continuously till turn they change color slightly . now quickly remove them on to the plate you have put the fried onions.

Now let the flame be on low and add a 2 inch stick piece of cinnamon you can break it into half and put and roast it on the pan.  in the same pan now add 4 to 5 black peppercorns, 3 to 4 cloves , 3 pods of green cardamom and roast. Remember to not let them burn just roast them slightly so that the flavor comes out, burning them would give a bitter taste to the gravy so best is to slightly toast them on low heat ,they cook really fast ,  they should change color very slightly not much and then quickly remove them on the plate where you added the onions and the coriander seeds .

Now take 1 cup of grated coconut and add it onto the same pan and roast it till it changes color slightly don’t turn it too brown . just change it to light brown color and remember to keep stirring it , if you keep it unattended it wont get roasted evenly, and develop patches . so keep stirring on low flame till it turns light brown in color.

Now let all these ingredients that we have roasted to cool down completely and then blen them into a fine paste in a blender .

To blend the masala

Add in all the cooled down roasted ingredients . to it add 1 roughly chopped tomato and a handful of washed coriander leaves . add in 1 tsp of ginger garlic paste , 1 tsp of red chilli powder , ½ tsp of turmeric powder, 1 tsp of coriander powder , 1 tsp of cumin powder , ½ tsp of garam masala powder, 1 tsp of meat masala powder.

Blend all of this mixture into a fine paste . firstly blend it dry and then add little bit water and blend it well to a smooth fine paste .

To make the gravy

Take a deep vessel or big saucepan . add in 2 tbsp of oil to it .

And let it heat up properly .

Then add in the blended paste to the oil , it may splutter so add it very carefully you may also turn the heat to low just before adding the paste , and once you add it turn the heat to medium to high flame .  Add in 1 tsp of salt to it, you can adjust the salt as you like .

Now stir it properly and cover it with a lid and let it cook for about 4 to 5 minutes .

After 5 minutes open the lid and stir it well . If the masala is sticking to the bottom of the cooker. Add in 1 tbsp of water and stir it continuously till the water dries up

Now once the masala starts leaving oil from the sides its now time to add in the mutton .

Take the pre cooked mutton pieces from the pressure cooker and add it to the masala and coat it well .

Now add in the remaining water with the tempering which is left In the pressure cooker , to this vessel . if less water is left you can add 1 glass of water to the vessel and stir

Now stir everything well . put the flame on high and let the gravy boil for about 5 minutes , till it thickens .

Once the water reduces and the gravy thickens , you can check that the mutton pieces are soft and tender with the help of a spoon or knife . take a little drop of gravy to check the salt.

Once the gravy is done then switch off the flame and serve this delicious mutton curry.

This can be enjoyed with plain steamed rice or rotis .
