Easy chole recipe

Easy Chole recipe. Chole is chick pea gravy , it is one of my favorite dishes. One can enjoy this dish for breakfast, lunch or dinner.

There are many versions of this recipe. I am sharing here the simplest chole recipe and very quick gravy which you can make when in a hurry. You just need to soak the chole overnight. This chole recipe gravy is easy and very quick to make.

This easy chole recipe is made without ginger garlic and onions and is yet very flavorful and super tasty. Once you soak and pressure cook the chole the gravy of it is really simple to prepare.


  • Chick pea – 1 ½ cups soaked for 6 -8 hours
  • Cloves – 3 to 4
  • Green Cardamom – 2
  • Cinnamon stick – 1 inch piece
  • Black peppercorns – 6 to 7
  • Star anise – 1
  • Bay leaf – 1
  • Black cardamom – 1
  • Salt – about 2 pinches
  • Tea leaves powder  – 1 tsp
  • Curry leaves – 5 to 6
  • Tomatoes – 2
  • Red chilli powder – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Coriander powder – 1 tsp
  • Cumin powder – 1tsp
  • Garam masala powder – ½ tsp
  • Chole masala – 2 tsp
  • Amchur powder – ¼ tsp
  • Salt –  1 tsp
  • Oil-  3 tbsp
  • Coriander leaves for garnishing .
  • Water as required


Soaking the chick peas or chole.

Wash chole properly with water at least thrice , then keep them in a big vessel . Then add clean water generously on top of it so that they remain immersed in it completely.

Adding water is very crucial because the chole will absorb the water , and soften. And also putting them in a big vessel , like a deep saucepan is important because, they will increase in size after soaking and absorbing the water .

Soak the chole in water for at least 6 to 8 hours . Best is to soak them overnight .  and cook them the next morning .

Pressure cooking the chole.

The next morning you will see that the chole has absorbed the water soaked well and have increased in size . Throw out the excess water from the chole , and then run it through clean water to clean it

Take a pressure cooker and add the chole into it , add in the whole spices like  3 to 4 cloves , 2 green cardamoms , 1 inch piece of cinnamon stick , 6 to 7 black peppercorns , 1 star anise , 1 black cardamom  , 1 bay leaf  and about 2 pinches of salt

Now very important step is to take a small clean muslin cloth and add 1 tsp of black tea leaves powder to it ( the tea powder that we use to make normal tea also called as chai powder) and tie it very tightly , seal it properly by tying. And put this tea leaves powder containing cloth in the pressure cooker along with the whole spices and the chole .

Now add enough water so that the chole are completely immersed in it . And also some more because, we are going to pressure cook the chole . Add approximately at least 4 glasses of water.

Now cook the chole in the pressure cooker till 4 to 5 whistles . If you have stainless steel pressure cooker it may take up to 6 whistles to cook the chole completely and properly .

Once the whistles are done. Switch off the flame let the pressure cooker cool down completely. Then open the lid to check if the chole are done

It should become soft if you prick a knife into it it should cut softly . if you take a few in your hands you should be able to mash them with your fingers .

We need a soft consistency not completely mashed up .

To drain chole

Now take a colander and place it above a big vessel. We have to drain the water from chole . You can lift the pressure cooker and pour the chole in the colander to collect the water in the vessel kept beneath the colander. Don’t discard the water , we need it for preparing the gravy .

If you can’t lift the pressure cooker. You can do the same process using a ladle and pouring the chole into the colander. that way you can collect chole in the colander and properly collect the water in the vessel beneath it.

Now remove the tea leaf powder containing cloth , we don’t need it now.

Remove all the whole spices we don’t need them now.

To make the gravy for chole

Before starting we need to make a tomato paste for that take 2 tomatoes wash and chop them roughly and blend them in a blender to form a smooth paste and keep it aside .

Now In a deep vessel or a saucepan add 3 tbsp of oil and let it heat up .

Add 5 to 6 curry leaves to it and let them splutter .

Now add the tomato paste to the oil very carefully lower the flame while adding it , and then stir well. Switch the flame on medium and add all the powder spices .

Adding the powdered spices to make the gravy for chole

Add in 1 tsp of red chilli powder , ½ tsp of turmeric powder , 1 tsp of coriander powder , 1 tsp of cumin powder , ½ tsp of garam masala powder , 2 tsp of chole masala (you can get chole masala of any brand in the store ), ¼ tsp amchur powder  and stir this well.

We need to cook the tomatoes and the powdered spices, so that the rawness in them goes away and they cook properly.

Keep stirring them if the spices are sticking to the pan add in 2 tbsp of water to it and keep stirring the mixture .

Now cover it with a lid and let it cook till its rawness goes away the tomatoes , and the spices start to leave oil from the sides , that’s when we know its done . this should take about 3 – 5 minutes .

Now open the lid and stir well , add in 1 tsp of salt and stir well . To this add the precooked chole and stir well , so that the masala properly coats well on the chole .

Take at least 2- 3 ladle full of chole water and add into the gravy . and let it cook .

To make the chole gravy thick

If you want the chole to be of thick consistency . Then take some chole in a ladle and put them onto a plate to cool down . After cooling put these ladleful of chole into a blender and blend them into a smooth paste. You can take the chole water and put it in the blender to blend it into a smooth paste. Put this paste back into the saucepan in which the chole are cooking and mix it well so that no lumps are formed .

Stir it well and bring it to a boil till the water reduces and the chole become of gravy like consistency.

Add about a handful of finely chopped coriander leaves . mix it well and delicious  chole are ready to be served.

Chole can be eaten with bhature , rotis Easiest everyday Roti recipe (Whole wheat flat bread) , rice Steamed rice recipe, Jeera rice recipe or puris . I personally enjoy chole with puris and rice.
