Dahi vada also known as Dahi Bhalla is a fried lentil dumpling served in sweet curd with tangy tamarind sauce and different powdered spices and condiments. This is a sweet and tangy dish with a hint of spices . This dahi vada recipe is easy to make and is very delicious.
This is one of my favorite chaat dish , it is sweet and savory and tangy . This dish is usually eaten as a side dish is mostly served in weddings or made during some special occasions and dinner parties .
Dahi vadas can be had as an evening snack or with lunch or dinner.
This dish is enjoyed by almost everyone and is also my personal favorite . There are many variations to the dahi vada recipe but , the dahi vada recipe that I have mentioned here is the simplest recipe to follow. Once you have soaked the dal overnight the rest of the dahi vada recipe is very easy to make .
It is made by less and readily available ingredients and yet it tastes delicious.
Ingredients for dahi vada recipe
For the batter
- Urad dal – 1 cup
- Ginger – 1 inch piece peeled and chopped
- Green chilli – 1
- Salt – just a pinch
- For the dahi mixture
- Dahi – 2 cups
- Sugar – 5 to 6 tbsp
- Black salt – a pinch
- Salt – a pinch
- Red chilli powder – about a pinch to sprinkle
- Chaat masala – to sprinkle
- Imli chutney – half cup
- Green chutney – half cup
- Coriander leaves- about a handful finely chopped for garnishing
- Green chutney
- Mint leaves – 5 to 6 sprigs
- Coriander leaves – handful or half cup of coriander leaves
- Ginger – 1 inch piece peeled and roughly chopped
- Green chilli – 2 green chillies roughly chopped
- Sugar – ½ tsp
- Salt – 2 pinches
- Water as required
- Salt as required
- Oil as required for deep frying.
To make the batter
Wash urad dal properly for at least thrice, soak it in water for at least 6 to 8 hours. Or overnight.
Soaking the dal properly is very important so that the dal softens up and is easier to cook , this is a very important step do not skip it , soaking the dal is very important . And to make perfect vadas its best to soak it overnight .
After soaking throw out the excess water drain the urad dal properly and then blend it in a blender.
Add in 1 inch piece of ginger and 1 green chilli and blend it into a smooth paste .
Make a proper smooth paste , blend the entire dal in to a smooth batter in a blender .
And put it in a vessel and mix well and add for about 1 pinch salt and mix well. Mixing it at this step is very crucial to and beat it well either with your hands or with a whisk , so that air is incorporated in the vadas and the vadas become soft and light and spongy . Beating it for at least 5 to 7 minutes is very important.
Now put oil in a kadhai for deep frying , heat it up properly on a high flame and then put it on a medium flame .
Take a spoonful of batter and careful put it in the oil to deep fry , you can fry 4 to 5 vadas at the same time , flip them carefully and fry them completely to light golden brown color. Let it cook completely on the inside as well the outside.
Fry them completely well. Fry on medium heat so that they get cooked well on the inside , frying them on a high heat would only result in browning them on the outside and the vadas may remain raw on the inside. To cook the batter well ,so that they don’t remain raw and dense on the inside. cook it on medium flame and let it cook well on the inside. So that the batter doesn’t remain raw and gets cooked properly and the vadas come out perfectly crisp and soft and well cooked.
Fry them well and take them out on a paper towel so that the excess oil get soaked on the paper towel. Soaking it on a paper towel or napkin makes it easier to remove the excess oil in the vadas.
Once you fry all of them add in all the vadas into warm water and soak them for about 5 to 10 minutes . put 1 pinch of salt in the water let it dissolve and the add the vadas.
Adding the vadas into water and soaking them for sometime makes the vadas very soft , fluffy and spongy .
Then remove them from the water and while removing them squeeze them gently don’t squeeze and crush them completely , just squeeze them lightly and put them into the dahi mixture .
To make the sweet dahi mixture
Take 2 cups of dahi / curd in a bowl . Add in 1 pinch of salt and add 6 tbsp of sugar to it and whisk it really well . So that the sugar is completely dissolved in it . Add in half cup of water to make it smooth.
Now add about a pinch of black salt and mix well . Whisk it well to avoid lumps . Make a proper lump free batter and mix it really well so that the sugar is properly incorporated in the dahi . The sweet and flavourful dahi mixture is ready .
To make imli chutney / tamarind chutney

To make green chutney
Take 5- 6 sprigs of mint leaves, about a handful of coriander leaves, 1 inch ginger piece, 2 green chillies , 1/2 tsp sugar , about 2 pinches of salt, and grind all of this into a fine paste , Add a little water to make it of paste consistency . Take it out in a bowl and add this while serving the dahi vadas .
While serving it add the 2 to 3 vadas and the dahi on the plate that you are serving in , to it add two tsp of imli ki chutney , sprinkle some chaat masala , and also sprinkle some red chilli powder and then add 1 tbsp of green chutney on top of it .
After adding the dahi the imli ki chutney , the green chutney the and sprinkling the red chilli powder and chaat masala powder . the delicious dahi vadas are ready to be served .
You may also add some sev and also some pomegranate on top of it for garnishing . The different colors from different ingredients look absolutely beautiful on the dahi vada and makes the it look very tempting. And this simple recipe makes some amazing dahi vadas .
