This can be had as a breakfast for during the evening as a quick snack. It usually tastes best with coffee or masala/ Ginger tea. I usually enjoy this sandwich with tea in as an evening snack.

Ingredients to make quick and easy chutney sandwich

  • Bread slices – 4 slices edges cut
  • Butter – 2 tbsp
  • Freshly shredded coconut – half cup
  • Fresh coriander leaves – half cup
  • Ginger – 1 inch piece peeled and chopped
  • Green chilli- 2 small sized roughly chopped
  • Sugar – 1 tsp
  • Salt to taste
  • Lemon juice – half a lemon squeezed

In a blending jar add in half cup shredded coconut, half cup of coriander leaves,  two green chillies, one inch piece of ginger , half a teaspoon of salt , one teaspoon of sugar and lemon juice of half a lemon squeezed which is approximately two teaspoons.

Blend everything to a smooth paste by adding very little water. Add very little water to it just for the purpose of blending, we don’t want to lose the flavors of the leaves and coconut.

Blend it into a nice fine paste. Make sure there are no lumps or pieces of coconut.

Take the bread slices, you can keep the edges if you like, but this sandwich tastes best when you cut the edges of the bread because it gives it a uniform soft texture.

Cut the edges of the bread with a knife , you can save those cut edges to make bread crumbs afterwards .

Now take a bread slice and apply butter on it generously. Butter adds in to the moisture and it gives it a very nice taste. Hence, apply butter generously on each slice of the bread.

Then add the blended paste generously on top of it

Take another bread slice and apply butter on it and use it to cover the other slice which has chutney spread onto it with buttered side facing down.

Now press it slightly and cut it into triangles or straight as per your choice. And serve with tomato ketchup. You can also have it as is without ketchup since it’s already very flavorful.

It goes well with tea , coffee or any soft drink of your choice .
